Meat & Fish Dishes

Ethiopian meat cookery divides cleanly into two traditions: slow and fast. The wat are stews simmered for hours in onion, garlic, ginger, and either berbere (red) or turmeric (mild yellow, called alicha). The tibs are quick-sautéed cuts of meat finished on high heat with onions, peppers, and rosemary. We do both.

Doro — Chicken

Doro WatThe national dish of Ethiopia. Chicken leg and thigh slow-cooked for six to eight hours in berbere, onion, garlic, and ginger, finished with a hard-boiled egg per portion. Deep, smoky, transformative.
Doro AlichaThe mild cousin of doro wat. Same chicken, same long cook, but with turmeric and ginger instead of berbere. Gentle, golden, beautiful.
Doro TibsChicken sautéed quickly with onion, jalapeño, and rosemary. Different cooking method entirely — fast, fragrant, lighter.

Beef & Lamb — Tibs and Key Wat

Awaze TibsSautéed beef in our house awaze marinade (a berbere-based chili paste). One of our most ordered dishes.
Beef TibsThe classic — sautéed beef with onion, jalapeño, garlic, and rosemary. Crispy edges, tender middle.
Lamb TibsSame preparation, lamb instead of beef. Richer, gamier.
Key Wat (Sega Wat)Beef simmered slowly in berbere until thick and deep red. The beef counterpart to doro wat.
Alicha SegaBeef in the mild golden turmeric sauce. Recommended if berbere is new to you.
Yebeg WatLamb in berbere — slow-simmered, deeply spiced.

Fish

Fish TibsTilapia cubes sautéed with onion and pepper, like the meat tibs but lighter.

Crisp fried turnovers stuffed with spiced ground beef and onion. Served with awaze for dipping.
